All vinegar goes through two different biochemical procedures, and both result from the action of different microorganisms. The first is alcoholic fermentation which transforms sugar into alcohol and carbon dioxide. The second is the action of acetobacteria to combine oxygen with alcohol.
Unfiltered and pasteurized organic vinegar contains "mother" strands of proteins, enzymes, and friendly bacteria that give the product a cloudy appearance which together with its bioactive components such as acetic acid provide multiple benefits.
